Do you want your kids to eat their veggies? Try this recipe for gluten-free fried cauliflower. It’s healthy, filling and easy to make.
The recipe
Break up cauliflower into many pieces, not too small and not too large.
Steam (using a steamer insert) in a large pot for about 10 minutes or until a fork can be inserted in the base of the largest piece without trouble. Don’t overcook! Undercooking is better than overcooking.
Make cashew crumbs with a food processor from whole cashews. Use maybe half a cup to a cup depending on how much you are making. Add salt, basil, pepper, other spices to taste.
Beat two eggs.
Heat up a pan (or two) with lots of olive oil. You will want to figure out the best setting, medium at most, and possibly a bit lower depending on the type of pan you are using. Stainless will burn much quicker, so about 1/3 lower than the medium is fine.
Dip the tip of the cauliflower into the egg and then dip into cashew crumbs. Place on the frying pan. Turn once a minute until all sides are browned. You can fry for anywhere between 5 and 10 minutes (longer is fine). Smaller pieces will get even softer, larger, not as much. Let it cool.
